How to edit the emacs keys with ESC prefix

When I try to edit the emacs keyboard mapping for an escape-prefixed command, it takes me to the command 'MarkHide'. I cannot seem to get to the escape combination that I want to assign.

With the Edit Keyboard Mapping dialog showing, select the Escape prefix key from the list of keys as shown in the Prefix Keys dropdown list.

Now when you type in a key in the Type the new shortcut key input edit field, that key and the selected prefix key defines the full key combination that will be assigned to the selected function by the Assign button.

Also from the previous Keyboard Mapping panel the Export button can be used to create a human readable text file containg the full definition of the selected keyboard mapping.
