Use the Options, Editor Options menu, General panel and in the Default File New extension entry field set the extension to be html ;)

The latest version of Zeus now has a shortcut method of creating a file of a given extension.

To create a new document of a given file extension you would do the following:

1) Select the Templates panel.

2) Select the Document Type required from the drop down list.

3) Click on the New File template.

NOTE: With a bit of tweaking it is also possible to control the contents of the newly created file by editing the template document for that extension.
