This may sound pretty simple but how do you set up the editor so that it will open Microsoft Excel Spreadsheets?

It is simple. You can't.

Why are you be trying to open Excel files in a text editor

Excel files are binary files not text files.

You need to open the Excel files in Excel itself or use a standalone Excel file viewer.
